Winter is the perfect season to enjoy a fresh oyster! While oysters are available year-round, they are most plump during winter months(Usually September-April). This is because the cold water preserves them, and they’ve consumed lots of algae throughout the fall. During warmer months(May-August), it’s spawning season- this means the oysters are softer and less palatable.
